HiSiaddi Technical Team Resolves Formulation Compatibility & Production Line Malfunctions for Dairy Manufacturers

    1. Client Demand: Food-Grade Custom Microencapsulated Plant Sterol Powder

    An Australian dairy producer specializing in functional lipid-lowering set yogurts purchased custom food-grade microencapsulated plant sterol powder (90% total sterols) from HiSiaddi in 2024 to fortify set yogurt formulations. After launching the initial 3-ton raw material batch into production, mass quality defects emerged: severe whey separation, gel collapse and product stratification within a 7-day shelf life. The client’s R&D team repeatedly adjusted base yogurt formulations without improvement, suspending shipment of the subsequent 7-ton custom order.

    In April 2025, the manufacturer invited HiSiaddi to diagnose and optimize formulations and production processes.

    2. Root Causes: Abnormal Hydrogen Bonding, Free Sterol Precipitation & Excessive Impurities

    (1) Imbalanced formulation compatibility

    The client’s original yogurt formula contained 0.55% plant sterol powder, exceeding the loading capacity of casein colloids. Maltodextrin wall materials in the sterol powder formed abnormal hydrogen bonds with milk proteins, disrupting the yogurt gel network. Absence of chelating and emulsifying additives led to uneven sterol particle dispersion and localized emulsion breakdown.

    (2) Flawed production feeding processes

    The Australian plant injected all sterol powder in a single batch post-sterilization at 88°C, destroying microcapsule encapsulation structures and releasing free sterols to break the milk emulsion. Low stirring speed (60 r/min) caused powder agglomeration and incomplete dispersion in the milk base.

    (3) Mismatched raw material selection

    The client’s original pine-source plant sterols contained elevated stigmastane impurities, which reacted with lactic acid in yogurt to accelerate spoilage and shorten shelf stability.

    3. HiSiaddi Solution: Modified Pre-Blended Powder, Adjusted Feeding Timing & Storage Guidelines

    1. HiSiaddi      technical team coordinated with domestic manufacturers to reformulate      custom plant sterol powder:

    Switch to refined soybean-source plant sterols with alkane impurities controlled ≤0.3%;

    Reformulate wall materials as modified starch-whey protein blends for superior compatibility with milk matrices;

    Pre-blend powder with 0.12% sodium citrate chelating agent and 0.15% monoglyceride emulsifier to stabilize oil-water yogurt systems. Revised raw material testing confirmed compliance with impurity and dispersibility benchmarks.

    1. End-product      production process optimization:

    Revised feeding sequence: Introduce sterol powder at 42°C post-milk sterilization with stirring speed increased to 120 r/min over 15 minutes for full uniform dispersion;

    Lower sterol powder addition rate to 0.38%, paired with minor gelatin dosage adjustment to 0.39% to reinforce yogurt gel structures, aligned with industry-leading set sterol yogurt formulation parameters.

    1. Targeted      storage guidance

    Custom storage specifications were issued for Australia’s high-temperature climate: raw materials sealed and stored at a constant 22°C with small-batch unpacking to avoid moisture absorption and caking that impairs dispersion.

    4. Implementation Results: Release of Remaining 7-Ton Order

    Small-batch trial production using reformulated plant sterol powder yielded yogurt free of whey separation with firm, stable gel structures, extending ambient shelf life from 7 days to 21 days and passing Australia’s FSANZ food safety inspections. The client authorized full shipment of the suspended 7-ton order, with annual stable procurement of 42 tons of custom sterol raw materials. HiSiaddi continues to provide formulation technical support for the brand’s new cheese and dairy beverage lines.
